Is there a way to track consumable parts?

If your Use Inventory is enabled in your Global Settings, then yes, quantities of parts sold and received and adjusted (i.e. consumed) are tracked.
If something else is meant by consumable parts, do provide examples of actual context and I would be happy to provide possible suggestions.
